Resepi Briyani Udang Indian Style

Oh my goodness, I just stumbled upon the most delicious looking dish! It's called UDANG MASAK BRIYANI and it looks absolutely amazing. The colors are vibrant and the spices look so flavorful. I cannot wait to try and recreate this dish in my own kitchen.

Ingredients:

- 1/2 pound large shrimp, peeled and deveined
- 1 cup basmati rice
- 2 cups of water
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon cinnamon
- Salt and pepper to taste
- 1/2 cup raisins
- 1/2 cup chopped nuts (almonds or cashews will work)
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1 lemon, cut into wedges

Instructions:

1. Rinse the rice and set aside.
2. Bring the water to a boil in a large pot. Add the rice, stir, and reduce the heat to low. Cover the pot and simmer for 15-18 minutes, or until the rice is tender and the water is absorbed.
3. While the rice cooks, heat the olive oil in a large skillet over medium heat. Add the onion and sauté until softened, about 5 minutes.
4. Add the shrimp to the pan and cook until they turn pink, about 3-5 minutes.
5. Add the turmeric, cumin, coriander, cinnamon, salt, and pepper. Stir to combine and sauté for 1-2 minutes.
6. Add the raisins and nuts to the pan and stir well.
7. Once the rice is cooked, remove it from the heat and fluff with a fork.
8. Add the cilantro and mint to the skillet and stir well.
9. Divide the rice among four plates and spoon the shrimp mixture over the top.
10. Garnish with lemon wedges and serve immediately.
