  2. Apply the salt, sugar, and tamarind paste all over the fish, making sure to get it inside the slits as well. Let it marinate for at least an hour, or preferably overnight.
  3. To make the sambal, blend together the shallots, garlic, and red chillies in a food processor until it becomes a paste.
  4. Heat up a pan with oil and fry the sambal paste until it becomes fragrant and slightly browned. Add in a tablespoon of oil if necessary.
  5. Grill the fish over charcoal, gas, or in the oven at 200°C for about 10-15 minutes or until cooked through.
  6. Top the fish with the sambal and serve immediately with rice and vegetables.
