Hi guys, I've got a super yummy recipe to share with you today! It's for nasi lemak, but with a twist – we're going to make a super-potent sambal to go with it. Trust me, you'll be licking your plate clean.
Ingredients:
For the nasi lemak:
- 2 cups of rice
- 1 can of coconut milk
- 1 lemongrass stalk, bashed
- 3 pandan leaves
- Salt to taste
For the sambal:
- 10 dried chillies, soaked in hot water
- 3 fresh chillies
- 1 large onion, roughly chopped
- 3 cloves of garlic
- 2 tablespoons of tamarind paste
- 2 tablespoons of sugar
- Salt to taste
Instructions:
1. Rinse the rice a few times until the water is mostly clear. Drain and set aside.
2. In a pot, combine the rice, coconut milk, lemongrass, pandan leaves, and salt. Add enough water to cover the rice by about 1cm. Bring to a boil, then reduce the heat to low and simmer for about 20 minutes, or until the rice is cooked through and the liquid has been absorbed.
3. While the rice is cooking, make the sambal. Blend the soaked dried chillies, fresh chillies, onion, and garlic until you get a smooth paste.
4. In a frying pan, heat up a few tablespoons of oil over medium heat. Add the chilli paste and fry until it's fragrant and the oil starts to separate from it.
5. Add the tamarind paste, sugar, and salt to the pan. Stir to combine, then reduce the heat and let it simmer for a few minutes, until the sauce has thickened slightly.
Assembly:
To serve, spoon a generous amount of the sambal over the rice. If you're feeling fancy, you can also add some fried anchovies, sliced cucumbers, and boiled eggs on the side. Enjoy!
