6. Remove the ice cream from the freezer, and let it soften for a few minutes. Then, using an ice cream scoop, place a small scoop of ice cream onto the bottom of one cookie. Place another cookie on top, and gently press down until the ice cream reaches the edges. Repeat with the remaining cookies.
7. Enjoy immediately, or place in the freezer until the ice cream is firm. Serve and savor every bite!
